Walnut and Cranberry Chicken Salad Croissants


A few weekends ago, Mr E and I got a whole Saturday together. A whole Saturday! It was bliss, and made all the better by Mr Blue Sky deciding to join us. To make the most of this perfect day we decided pack up a perfect picnic and head to a perfect setting.


Now, Mr E and I love picnics- not that we get to do them very often, but when we do we really go all out! I even have my own picnic hamper (and have done since I was 16- I was that kind of teenager)! In my mind, picnics are just an excuse to pack up all your favourite foods and lie around in the sun grazing all afternoon- indulgent or what?! So what was in our picnic hamper on this fine day?

Roasted vegetable crisps (a new addiction of ours- the beetroot crisps always go first!)
Red Onion Marmalade (we eat this with as many things as possible, we love it so much. I'll share a recipe soon, I promise!)
A particularly fine blue cheese
Chive crackers
Homemade raspberry lemonade

The main event were croissants filled with a walnut and cranberry chicken salad, which were a complete experiment but one we were very happy with the results of! We had roasted a chicken for dinner the night before, so we had plenty of meat left over, I had bought croissants as a breakfast treat and they were on offer so I bought a few too many, the thyme came from our garden and all the other ingredients were things we had in the cupboards- I shall be making sure that they're always in the cupboards if it means I get to rustle this up again!


Walnut and Cranberry Chicken Salad Croissants
Makes 4

Ingredients
2 servings of cooked chicken (2 breasts, 2 thighs, 2 legs, one of each or a mixture... whatever you have really!), chopped into small chunks
4 croissants, halved
75ml mayonnaise
30g walnuts, roughly chopped
30g dried cranberries, roughly chopped
Small handful fresh thyme, leaves only
1 tspn Dijon mustard
1/2 tspn lemon zest
1/2 tspn lemon juice
Salt and pepper, to season

 
Directions
I'm not even going to break this down into step by step instructions! Simply combine the mayonnaise, mustard, lemon zest and juice and give it a stir. Throw in the chicken, walnuts, cranberries and thyme leaves and mix thoroughly until everything's well coated. Season to taste then fill the croissants as full as you can without having a mess on your hands!
